Ingredients
This simple vegetarian wrap has a handful of basic ingredients. This is the kind of meal that you can prepare in just a few minutes on a busy night or have for a quick lunch. Find exact measurements for this wrap in the printable recipe card at the bottom of the page.
- Zucchini – Sliced length-wise into thin, flat strips. A mandoline slicer works great for this! If you don’t have zucchini, yellow summer squash grills well, too.
- Tomatoes – Diced or thinly sliced. I used grape tomatoes, but you could use a roma, cherry, garden tomato, or your favorite variety.
- Red onion – Sliced into smaller, thin strips for easy bites. Feel free to leave these out if you don’t like the tangy onion flavor.
- Kale – If you find kale too tough, feel free to massage it for a few minutes with a little splash of oil or dressing. Swap for spinach if you prefer a milder, softer green.
- Cheese – I like using slices of white cheddar or chipotle gouda cheese for extra flavor, but crumbled feta or shredded havarti would be delicious as well.
- Tortillas – I used a gluten-free tortilla, but you can use your favorite kind. Low-carb options are suggested in the FAQ section below.
- Hummus – You can use this homemade recipe or a store-bought version for convenience. Bolder flavors like red pepper or roasted garlic are great to make the wrap even more flavorful!
How to Make a Hummus Wrap
This healthy tortilla wrap takes less than 15 minutes to prep. Here are the basic steps to making it:
- Heat a skillet or grill to medium heat.
- Remove the ends from the zucchini and slice lengthwise into strips.
- Toss sliced zucchini in olive oil and sprinkle with salt and pepper.
- Place sliced zucchini directly on the grill and cook until tender.
- Place the tortillas on the grill until the grill marks are visible and the tortillas are pliable.
- Remove tortillas from the grill and assemble the wraps: 2 tablespoons of hummus, one slice of cheese, zucchini slices, 1/2 cup kale, onion, and tomato slices.
- Wrap tightly and enjoy immediately.
Tips
- I used a grill pan to cook the zucchini, but you can sauté it in a skillet or pop it on a preheated grill if that’s better for you.
- I like to use a classic hummus, but you can make your own or use whatever flavor you like most. Red pepper hummus would add amazing flavor here.
- Be sure to grill the tortillas before assembling the wraps, otherwise they might split. The heat from the grill makes the tortillas pliable!
Recipe FAQs
You could use a Mission Carb Balance tortilla to reduce the net carb count in this healthy lunch! Or make these gluten-free + keto Zucchini Tortillas. Messier low-carb options: Feel free to leave out the cheese but replace the tortilla with a cheese wrap or skip the kale and use a lettuce wrap instead.
We like a creamy-yet-bold option to complement the hummus, so we opt for a great sharp cheddar, chipotle gouda, or even a dill havarti! A tangy feta would also be a delicious option.
The key to keeping the tortillas intact is warming them first. Just place the tortilla on the grill for a couple minutes after you cook the zucchini–Once it’s warm and the grill marks are visible, the tortilla should be pliable enough to bend without breaking or tearing.

Sounds like you had a fabulous weekend! I like when my husband goes away every once in a while too…then I have the house to myself and I can do whatever please. And I always cry at Steel Magnolias, too! This wrap looks amazing! I’ve never tried Jason’s Deli’s version, but I’m sure this is even better. And especially with that hummus and gouda cheese…yum!
Yes Steel Magnolias gets me every single time!! 🙂

It really was! Yes, this is such a good summer meal!
Everything you just described…I want to do it ALL! I’ve been left home alone this week…except with a baby 🙁 Not fun at all. Your wrap looks like the world’s most perfect lunch! Yum!
Oh dear, yes I would imagine a baby would impede all the sangria drinking! 🙂
These look amazing and they’re right up my alley…so fresh and healthy!
These are so easy! You would love them!
Love this hummus wrap! I could eat hummus everyday and this wrap sounds like the perfect way to eat it! I used to work at a restaurant that served a hummus wrap and I was just thinking about how good it was the other day! Your weekend sounds amazing! I’m always a little sad when my husband leaves for the weekend, but then I always love alone time where I can do whatever I want and eat whatever I want!
Sometimes it is just fun to have the house all to yourself! I love when he is home, but I realllly like getting to control the television and eat girl food! 🙂
Sounds like a fabulous weekend! I kind of like it when my husband goes away every once in a while. I definitely end up doing things I wouldn’t ordinarily do. Love this wrap! Grilled zucchini is a favorite of mine.
Mine too!! It is the perfect summertime vegetable!
This is like my ultimate lunch wrap! Literally everything you piled into these wraps sounds drool-worthy, especially that hummus and grilled zucchini. Since I don’t want to wait to enjoy these wraps at lunchtime tomorrow, I really need someone to make it for me NOW for a midnight snack tonight! LOL. Pinned!
Who would have thought hummus and zucchini go so well together?! It really is a great combo!
How did they taste if you did not eat them straight away? I want to make them in advance but am worried they will get soggy. Are they just as good cold?
Hi Maggie! I don’t think this would work made ahead since there is so much moisture in the zucchini and the tomatoes. I think it would cause your wrap to fall apart.
Sounds like the perfect weekend! I miss my husband when he leaves to go out of town, but I sure do like being in full control of the TV and food menu! I do the same thing and watch a ton of girly movies. It’s just the best!
These wraps sound delicious!
Agreed! Completely! 🙂
I love Steel Magnolias! I cry every. single. time. This wrap has me drooling over my keyboard. I’m a big fan of zucchini, so this is something I’d absolutely love!
Oh I am a MESS when I watch it! But it is still one of my favorites! 🙂
Just tried out this recipe tonight and LOVED IT!! I’ve been looking for recipes without meat or poultry to cook a couple nights a week; however, it’s hard to find recipes that are filling. This hit the spot just right! Delicious! Thank you so much for sharing!
Yay Megan I am so happy!! This really is one of my favorite recipes, partly because it is so easy! 🙂 I am so glad you enjoyed this!
Sounds like you had a wonderful weekend, Annie! And this zucchini hummus wrap sounds and looks incredibly delicious – I love that you grilled the zucchini.
Just made this recipe and my tummy is full of goodness. Thanks for sharing!
These were just delicious!!! Instead of grilling the zucchini, I threw it on a sheet pan along with some grape tomatoes and thinly sliced onion, drizzled them with olive oil and salt and pepper, and roasted them in the oven for a bit. Made a big batch of the veggies so my girls and I could have healthy lunches for the week. Sooo good! Will be making them again soon!
This was sooo good Thanks for sharing! Definitely pinning!!
Absolutely delicious! Just made it. Thanks for the pin!!
I’ve only seen GF wraps in the freezer and they are all frozen together, any tips?
Hi Lacey! You are right! I wish they put some kind of wax paper or something in between! When I buy the frozen Udi’s wraps I always just put them in the fridge so they slowly thaw and they don’t crack or stick together. 🙂
Made these for the first time today. I had never had kale or hummus before so I was kinda skeptical. I passed on tomatoes added sliced turkey to it and used garlic hummus. It was absolutely delicious!!!
I’m so glad you liked this Payton! I’ll have to try adding turkey like you did sometime! It sounds delicious! 🙂
